Mapo Tofu & How to Stir-Fry Any Leafy Green

Master this super easy and tasty tofu dish and learn the basics of stir-frying vegetables like kale or spinach. Vegetarian options are available.

For your shopping list, here is the mapo tofu recipe and for the leafy green stir-fry, pick up a leafy green of your choice, and some ginger, scallions, and garlic plus soy sauce and/or oyster sauce.

Spectacular Fried Rice & Rice Pudding

The class time listed is U.S. Eastern Time (NY/DC).

Don’t throw away leftover rice – make my fried rice, flavored with a secret American ingredient. I will also show you how to make an Asian coconut rice pudding and Chinese juk (rice porridge) with your leftover grains. Vegetarian versions are available. Have 4-5 cups of cold or leftover rice handy for the class.

The shopping list for the fried rice: 2-3 cups leftover rice, 2-4 scallions (or 1 leek), 2-3 garlic cloves, 4 eggs, 1 medium carrot, 1/2 cup green peas (preferable fresh), 1/2 pound diced cooked ham, bacon or other meat (or smoked tofu), salt, pepper, 2 tablespoons cooking oil, and good old-fashioned American yellow mustard.

The shopping list for the rice pudding is: 1 cup leftover rice, 1 cup coconut milk, 1/4 cup sugar, 1 tbs vanilla, 1/4 tsp, salt and a choice of your soft fruit (banana, mango, peaches etc).

And if you want to make juk (Chinese congee), just have some extra rice and water on hand.

Jen's Birthday Class: Noodles

Join Jen on her birthday for a special noodle class — she’ll teach you how to make different styles of Chinese noodles by hand, including hand-rolled noodles, cat’s ears (orecchiette), and one very long “longevity” birthday noodle. All you’ll need is flour and water for the noodles, though recipes for broth and sauces will be provided.
