How to Make the Best Mojito

In a separate post, I wrote about where to get the best mojito in Havana. For those who want to enjoy Cuba's most famous drink wherever they happen to be, try this recipe. The key, I've learned after speaking to many bartenders, is to find mint with thick, healthy stems and well macerate the mint, with the stems, in your glass before adding the liquid. Cheers, or as they say in Cuba, "Salud!"

2 teaspoons sugar
The juice of half a medium-sized lime
Two big sprigs of mint with thick stems
45 ml white rum
150 ml sparkling water
Ice
A dash of angostura aromatic bitters

In a tall glass, combine the sugar and lime. Add the mint. Muddle the contents of the glass until the mint is well macerated. Add the rum and sparkling water and mix until the sugar is well dissolved. Add ice and the bitters. Garnish with the remaining mint and serve.
